Karob is a species of evergreen tree belonging to the family of fabaceae. It is grown in the Mediterranean region and in Asia Minor. Pods are called carob bread. The fruits taste like sweetened cocoa, and therefore are used as a it substitute, mainly due to the lack of caffeine. Fruits processed into flour give a dark color to the baking and glaze.
